This eggplant parmesan is different from the original recipe, where eggplants are fried and cooked with tomato sauce. This a revised version that includes fresh tomatoes and anchovies, which give a unique flavor. All the ingredients are fresh, grilled or raw. The mozzarella cheese melts between different layers, adding a sensational taste that will explode in your mouth. Try to believe!
If you don’t have fresh tomatoes, you can replace them with tomato sauce. However, I must say that fresh tomatoes really give you an irreplaceable taste of freshness. To make it more cheesy, add some parmesan on top before baking.
