Doesn’t it happen sometimes to find yourself in strage stuations, where you just come up with a specific plan in your mind, and then everything that happens goes in the complete opposite direction? I love surprises. More often than not, I find myself appreciating more unexpected things rather than planned ones.
These fantastic chicken drumsticks represent exactly this idea; the sweetness of the dried apricots and the orange/lemon juice combined with the genuine taste of the chicken, well, this combination is truly a satisfying and successful bond.
Let yourself go, follow your fantasies and dreams, but also every little detail that surrounds you, unexpectedly. Today I push you to look forward to tomorrow with a different mindset, to check out as many opportunities as possible, to let your emotions guide you. You never know what can happen in the other room, unless you take the courage to actually open that door.
1. Squeeze the lemon and the orange in a bowl, add the sage leaves, the black olives, the dried apricots, salt and pepper.
2. Drizzle some oil in a pan with some sage and brown the chicken drumstiks on both sides on medium heat for about 2 minutes. Once the chicken starts looking “tan”, add a sip of white wine.
3. Then add the olives and the dried apricots, salt and pepper. Finally, put the lid and cook on low heat for about 45 minutes. From time to time, add a sip of water so that the chicken doesn’t dry out.
4. Once the chicken is tender and the sauce is dense enough, just serve and enjoy this delicious dish.
I would say the quality of the ingredients in this recipe is fundamental. Buy the chicken from a local farm or somewhere you have trust in. Especially if you plan to cook this dish for a special occasion, the quality of the meat would make a total difference in the overall taste of the dish.
