A place in the world where I find peace in my mind are the mountains. Either in the winter of during summertime, skiing or hiking, the mountains transmit me a powerful energy that I hardly ever found elsewhere. My family has a little apartment in the Italian Alps, in a little city called Asiago, where they are famous for producing cheese and speck. For this reason, making recipes with speck brings me back to those years when picnicking in the woods was my favorite moments of the day.
I decided to combine zucchini, speck and saffron because they have very distinct flavors and yet, together they create a delicious mix. My grandma always said that a plate of food can taste even better if you put different colors together, so here we go: green, reddish, and yellow.
In the meantime, boil water in a pot and weight the pasta. For this recipe I suggest small pasta like maccheroni or penne. As usual, add the salt after the water boils and finally the pasta.
This recipe is too good to eat it by yourself, so invite some friends over and enjoy it!
