It’s pasta day, again! Before coming to Germany, I never had the passion of making homemade pasta (unless I would go to my grandma and enjoy her amazing tagliatelle). Now, as a foreigner, making pasta makes me extremely happy and proud of being Italian. The taste of freshness is not comparable to the regular pasta you can find in supermarkets. The quality of the eggs and the flour, of course, are crucial for an excellent result.
I received a ravioli maker as a gift, and I must admit that these little squared ravioli look great and taste even better. I already tried them in different versions and with various sauces, but this recipe is so far my favorite. The pasta is filled with ricotta cheese and potatoes. I decided for a fresh tomato sauce, made from scratch with cherry tomatoes and fresh basil.

Making ravioli takes some time, so I suggest you to make a lot of dough and freeze the ravioli. You can also fill them with different stuffing, such as ground beef or simple veggies.
