Imagination. Creativity. This is what food is about, especially in Italy, where food plays such an important role in the culture. I have traveled many places, but I’ve never seen another country where you can find such a diversity in flavors and recipes. Every region has its own special dishes, but overall, some recipes are just the result of imagination and creativity. It’s magical: you look at some ingredients and the idea pops up in your head. Just as simple as it seems.
This risotto idea was as random as a bird flying in the sky. It was almost lunch time, and I wanted to prepare something different, a recipe I never tasted before. Sometimes it happens. You just want to cook (or simply eat) a unique meal, that’s all! As usual, I opened my fridge, checked what was left from the weekend, and here they were. Salmon and asparagus. Wow, I got it now. As somebody said: “The best things in life happen when you least expect them”.
Instead of using smoked salmon slices, you can use sword fish. Don’t put cheese on top, it will destroy the flavors. Putting cheese on a dish with fish is really the worst thing you can do. Believe me, I’m Italian! :)
