There are many local markets in Munich where you can find traditional foods from all over the world. Whenever I go there, seeing goods from my country gives me a positive feeling. It’s a familiar atmosphere that brings me instantly back home. These places are obviously more expensive than supermarkets, but you can definitely notice the difference in quality. I bought Italian sausages because I had some nostalgia for my home town, Mantova. One of the typical dishes is risotto alla mantovana, which is risotto with sausage.
Sometimes you just need to add an extra ingredient to obtain a delicious and peculiar taste. In this case, radicchio, with its bitter taste, can give a completely different prospective to a simple dish with rice and sausage. Ready?
To make the perfect risotto there are two magic rules: use the right rice and take care of it. This is not a kind of recipe that you can leave it cook by itself. Think of it as a baby: stir it gently, taste it, check if it’s salty or tasty enough, add broth if it dries. Care. Love your food. That’s all!
